GOAT’S MILK ICE CREAM
WITH OAT BISCUIT CRUMB

Directions
1. In a pan, combine 300ml goat’s milk, 250ml double goat’s cream and 1 halved vanilla pod, seeds scraped out. Bring to a simmer, then remove from the heat; cool.
2. In a bowl, beat 3 egg yolks with 100g caster sugar until thick and pale. Gradually whisk in the milk mixture.
3. Return to the pan and warm over a low heat, stirring with a wooden spoon until thick enough to coat the back of it. Remove from the heat; cool. Discard the vanilla pod; chill for at least 2 hours.
4. Churn in an ice cream maker following instructions. Top with crumbled oat cookies.
